Kitchen Fun

One of my goals for this year is to do more cooking, so I decided to try a new recipe from the cookbook 366 Delicious Ways to Cook Rice, Beans, and Grains. I bought this cookbook in the spring of 2008, and I think this is the first recipe I've tried from it! I decided on the "Brown Rice and Lentils" recipe on p. 329, went to the grocery store, and came back with several goodies!

For starters, I didn't have a large skillet with a matching top! I was also missing the spices cumin and coriander in my spice rack, and I also picked up lentils, fresh cilantro, and fresh scallions.

Here, I sauteed the fresh carrot and small onion (in the first picture) in olive oil, and added the cumin and coriander. Yummy smell already at this point!

Here, I added the uncooked brown rice and lentils, and sauteed a little more. I added four cups of water, put the lid on and brought it to a boil. Then it simmered for 40 minutes.

The scallion and cilantro got mixed in at the end, and the whole enchilada had to sit under a paper towel for five minutes.







And voila! It tastes really good, and the recipe made several servings! Can't wait to have it for lunch this coming week!

More Holiday R & R

I've really enjoyed the first week of my vacation. I've gotten a lot of time with family, some with mine and a lot with George's, and that's been nice.

One of the odd things that's come from the time together, though, is that my being a vegetarian has come to the surface during three different meals with George's family, and the comments have been against my shying away from red meat and chicken. Part of what's so odd to me about the issue coming up this week, is that I've been a vegetarian for over two years now, and I've never gotten any "feedback" from them until this week. I need to think carefully about how to respond the next time it comes up, because I don't want to come across as contentious, angry, or finger pointing at them about eating meat. I became a vegetarian for health reasons, and have lost 100 lbs and all my diabetes and blood pressure medications, thanks to the vegetarian diet. His whole family has witnessed my transformation, which is part of why I'm baffled by this sudden "interest," more like concern, in my giving up meat. I've always tried to work my diet around whatevers being served at their home or available on the menu of whatever restaurant the family has gone to, and I've never complained about the food choices. I've enjoyed their company along the way, and have been appreciative when veggies have been available. I hope the comments will pass soon. Does anyone have any suggestions on how I can handle this and keep the family peace?

Another "odd" thing that's come from the past week is that George, his brothers, and first cousin have taught me how to play a game called Star Munchkin. It's a fun game that involves strategy, and interaction with the other players, sometimes helping--but sometimes ganging up on opponents too. So far, each game we've played has been pretty lengthy. Over the weekend, it's been a pretty good investment of time. There's another round of the game on tap for today; as much as I've enjoyed learning the game, I may just let the guys go at it this afternoon! :)

I've also been reading a lot the past week, and have finished a few books so far. I may finish another this afternoon, especially if I don't get sucked into Star Munchkin again! I've gotten some good ideas for reading material from Goodreads.com, and have gotten back into the habit of utilizing the local public library. I've ordered a few books from Amazon.com over the holidays, but mainly I've been putting books on hold through the library's online catalog, and having them routed to the library branch closest to me. Problem is, I've seen so many things I want to read, and put holds on them, that I've got a pretty sizeable stack of books from the public library to work through. That normally wouldn't be a "problem," except that I've done the same thing at the university library I work for! In a nutshell, I'm realizing I may have a book addiction! I love having books around! At least I don't feel like I have to OWN a lot of books, though I have quite a few. I do enjoy having a lot of books around to choose from when I finish one book and need a new one to start. I also like having several books going at one time, usually a variety of fiction and non-fiction, so that I can pick up whatever I'm in the mood to read at the moment. I didn't always read that way; I used to finish one book before I started a new one. Now, I love the variety...though sometimes I'll get on a kick to finish more than one book before I add to the "in-progress" pile.

I've also gotten a good bit of running in over the holidays, including a 7.15 miler at the American Tobacco Trail yesterday. My running goal for December was to run 100 miles, and it looks like I'm going to break that mark soon--a good thing since the month is coming to a close soon!

Interesting Week to be a Vegetarian

Since I left the Rice House, I've stayed the course on being a vegetarian, with the exception of salmon on Valentine's Day...at least until this week! I have been lulled into the complacency of thinking the healthy veggie options were everywhere, and that this would be easy! But not so much...


Our department had our belated holiday party at a local barbeque restaurant, one that's been around for decades. I remember going there with my family when we visited Durham in the 1970s, and it's still around, in the same location, even. Anyway, the gathering of people was lots of fun, but our family style eating options were not exactly healthy. On our menu: bbq, brunswick stew, hush puppies, french fries, green beans and cole slaw. I had seconds on the green beans and cole slaw, though I could taste the salt and sugar in each respective dish. I also had a taste of the barbeque and brunswick stew to see if I missed meat, and I discovered that I don't, really. It didn't taste bad--in fact I remembered why I used to love bbq, but I don't miss it now. Not a craving anymore. In fact, my stomach was a little unsettled for the rest of the afternoon, so I'm really not missing it! But, I did enjoy being away from campus for lunch, and the company was great, so I'm glad I went.


Last night, I went to the local Dream Dinners for a "Sneak Peak" promotion offered by our employee health program. As part of the deal, I got to prepare and bring home a 3-serving entry to be cooked at home. I'd heard of Dream Dinners, but never been in one, so I decided to check it out. I used MapQuest to get directions, which took me a back way, not on the interstate, and I was glad to learn a new way to that area, which was good.


When I got there, the local DD owner and a dietician from the employee health program were there to explain things. It all seems like a great idea for busy people, especially busy people with families. There were three freebie entree options to choose from last night, all three of them meat! I decided to be a good sport while I was there and put together the honey and herb grilled chicken breasts. I went to the station, where they had three frozen chicken breasts in a plastic ziplock already, and I followed the instructions on the sign for putting in the various spices and toppings to get it "cooking ready." This included non-fat buttermilk (which I passed on, very high in sodium), honey, mustard, and a variety of spices. They provided the recipe for cooking it on a sticker that's on the front of the bag in the picture to the right. It was fun enough to put it all together and bring home, but it's chicken, and I haven't ventured down the chicken road yet. I'm not sure I want to yet, so I stopped by the grocery store and got some things to make a whole wheat veggie pasta salad, which turned out very well! I didn't use a recipe this time, just picked up some fresh veggies (squash, zucchini, red peppers and cherry tomatoes) to steam and add to the whole wheat penne pasta I already had at home. I threw in some olive oil, shredded swiss cheese, and Mrs. Dash on the flip side. 30 minutes start to finish, and yum! The thing I learned from last night is that I'm having fun putting my own ingredients together and cooking.

Food obsession?

Okay, I think I've gotten a little obsessed with food.

Eventhough I'm still on the Rice Diet, and eating my meals at the Rice House, I've been scanning the web for area restaurants online, to see if there's anything I'll be able to eat once I'm away from the Rice House. I get a kick out of finding menus online. Asian restaurants may be my best bet overall, since several offer steamed rice as well as steamed vegetables. Today I looked up the menu for Red Robin, which is new to Durham. I used to enjoy the nearby High Point location a lot when I lived in Greensboro. Now, Red Robin is known for their burgers. I did find a grilled salmon burger on the menu, which could be interesting. There's also a veggie burger, and a vegetarian rice bowl dish on the entree side.

I am planning to eat at home most of the time, so I'm collecting recipes when I can. There are a lot of recipes out there on the internet, so I'm leaning heavy toward vegetarian and vegan ideas. One website I discovered today is My Vegetarian Recipe of the Day. I saw a yummy looking veggie jambalaya recipe on there, which I saved to an online cookbook I've created at My Cookbook on the internet. I've also added some low-sodium and veggie cookbooks to my wishlist on Amazon, so that I can remember the cookbooks I've come across that look good to me. I'm really looking forward to honing my cooking skills.
